Recipes for the "Big Day"!

Were you fooled? I never said which "Big Day" Dion Lim (KMBC Channel 9 FirstNews anchor) and I were preparing recipes for!

Although I do make a lot of wedding cakes, the "Big Day" in question Thursday morning was Super Bowl Sunday, and the recipes were healthy - and FAST - options for Super Bowl party snacks.

Extreme Cake Challenge


On Thursday evening at 5:00 p.m., I received an e-mail from a local hospice that I frequently volunteer with. The request, "We just found out that we have a patient who is celebrating his 47th wedding anniversary tonight. Any chance you can donate a cake and some flowers, and have them here this evening?" I looked at my watch to be sure I was looking at the correct time. My mind was racing as I picked up the phone to call in, "I can do it. It won't be a big cake, but I can do it. Will 7:00 p.m. be okay?"

So, with 90 minutes to spare (delivery would take 1/2 an hour), I rolled up my sleeves and put my heart into creating something worthy of someone celebrating their last wedding anniversary. My man-friend, Paul, picked up a dozen red roses on his way home from work, picked me and the cake up at 6:30, and whisked us off for the delivery.

We stayed a while and listened to stories of this special couple's romance and wedding day. At one point during our visit I asked the bride what color she had chosen for her wedding flowers. Coincidentally, the bride chose white flowers for the top of her wedding cake. Without knowing this in advance, perhaps you can imagine my surprise...here's a pic of the cake I made for them:
